Those who know me personally, knows how I love to try different health conscious food choices! So along this healthy lifestyle journey I like to try to ease my family into trying different food options. As of lately I give my family 1 vegan meal out of the month. (Typically when I meal prep it’s at least for 5 days at a minimum ahead of time.) I wanted to create something flavorful, but simple, healthy yet filling! Nevertheless I came up with the perfect combo! I introduced my “Vegetable Medley”. This is a wonderful combination of mixed vegetables baked to perfection! My family absolutely loved it! Guess what? NO MEAT! NO DAIRY! VERY FILLING! I strongly suggest this as a healthy meal choice. Below is the entire recipe! Let me know if you guys love it as much as my family does!
VEGETABLE MEDLEY
INGREDIENTS
(SERVING SIZE FOR A FAMILY OF 4)
4 CUPS- BROCCOLI
4 CUPS- CARROTS
4 CUPS-RED POTATOES
4 CUPS- GREEN BEANS
3 TBSP-GARLIC POWDER
3 TBSP- ONION POWDER
3 TBSP- PINK HIMALAYAN SALT
3 TBSP- FRESH PARSLEY
3 TBSP- FRESH CRACKED BLACK PEPPER
1/2 CUP -OLIVE OIL
MATERIALS NEEDED
OVEN BAG (PREFERABLY 19 INCH X 23.5 INCH)
ROASTING PAN DEEP DISH (1/2 SHEET)
PAM COOKING SPRAY
CUTTING BOARD
KNIFE
COLANDER
LARGE MIXING BOWL
PREP TIME 15 MINUTES
COOK TIME 30 MINUTES
TOTAL TIME 45 MINUTES
DIRECTIONS
Pre- heat your oven at 375 degrees. Begin to gather all of your vegetables. Thoroughly rinse your vegetables and let drain using a colander. Set up your cutting board and knife while your vegetables drain! Individually chop up all your vegetables. Set aside your vegetables in a large mixing bowl. Mix all vegetables together until equally combined. Blend together all seasonings and set aside.
Place all of the chopped vegetables in a large mixing bowl. Pour your olive oil over your vegetable mixture, and mix thoroughly. Begin to sprinkle the seasoning blend into your vegetable mixture! (Evenly blend thoroughly) Once again make sure everything is incorporated so that your dish comes out flavorful! At this time outline your roasting pan with your oven bag. Scoop your vegetable medley into your oven bag , then close your oven bag with the nylon tie provided. Using a knife cut 6 half inch slits across the top of the bag. (The slits will allow steam to escape as your veggies cook) Once placed in the oven, bake for 30 minutes!
Take out of the oven and allow to sit for about 10-15 minutes. After sitting, tear open oven bag away from face. (This way you won’t be burned by the steam being released) Begin to plate and ENJOY!
